  • ½ head savoy cabbage, chopped
  • ½ red onion, chopped
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp vegetable oil

  • ½ cup pumpkin seeds
  • ½ cup walnuts, chopped
  • Optional for added sweetness – add ½ cup dried cranberries or raisins or 1 tbsp raspberry or red currant jam to dressing.

  • Chop the cabbage and sprinkle it with salt. Mix altogether by hand and let it sit for 10 minutes to help soften the cabbage. 
  • Combine apple cider vinegar and oil in a small bowl.
  • Pour over cabbage.
