  • beets, approx 10 medium to large sized
  • 4 tbsp apple cider vinegar
  • 3 cloves of garlic, finely chopped
  • salt and pepper to taste
  • 1 tsp granulated sugar
  • 4 tbsp of vegetable oil

Instructions

Wash beets and then cover in water and cook till a fork can pierce through (about half an hour).

Strain water and let the beets cool down.

Peel and then cut into small pieces about 1” in size.

In a separate bowl, mix apple cider vinegar, salt, pepper, garlic, sugar and oil. Pour over the beats and mix together. Serve.
