Baked Radicchio and Sweet Potato Side Dish
Ingredients
- 3 medium sweet potatoes cubed
- 5 cups flat head cabbage coarsely chopped (or brussel sprouts)
- 2 cups radicchio coarsely chopped
- 1 cup pomegranate
- 5 tbsp olive oil
- 2 tsp salt
- 1 tsp pepper
Instructions
- Cook sweet potatoes with skin on in boiling water for 10 minutes. Drain.
- When cool enough to touch, peel and cut sweet potatoes into cubes.
- Place sweet potatoes in a large mixing bowl.
- Add chopped cabbage and radicchio.
- Add oil, salt and pepper.
- Mix all together by hand.
- Transfer to a casserole dish. Cover with lid.
- Bake at 360F for 30 minutes.
