  • 3 medium sweet potatoes, cubed

Baked Radicchio and Sweet Potato Side Dish

Ingredients
  

  • 3 medium sweet potatoes cubed
  • 5 cups flat head cabbage coarsely chopped (or brussel sprouts)
  • 2 cups radicchio coarsely chopped
  • 1 cup pomegranate
  • 5 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper

Instructions
 

  • Cook sweet potatoes with skin on in boiling water for 10 minutes. Drain.
  • When cool enough to touch, peel and cut sweet potatoes into cubes.
  • Place sweet potatoes in a large mixing bowl.
  • Add chopped cabbage and radicchio.
  • Add oil, salt and pepper.
  • Mix all together by hand.
  • Transfer to a casserole dish. Cover with lid.
  • Bake at 360F for 30 minutes.
  • Mix with a spoon.Sprinkle pomegranate over top.
  • Continue baking for another 15 minutes.
  • Remove from oven and serve.
