Ingredients Needed

  • 1 green acorn squash, medium to large-sized
  • 2 tbsp brown sugar

Roasted Acorn Squash Mash Recipe

Wash acorn squash with soapy water and rinse thoroughly. Cut in half and with a spoon, scoop out the center seedy part. 

Place in the microwave on top of a sheet of paper towel for 10 minutes.

Carefully remove from microwave and place in a pie dish with cut halves facing up. Sprinkle with 1 tbsp of brown sugar.

Bake for one hour at 370F. 

Remove from the oven and let cool enough to handle. Peel the skin and mash the remaining acorn squash.
