How To Make Peach Jam and Walnut Dessert Squares

Ingredients
  • 140 grams butter – room temperature
  • 100 grams granulated sugar
  • 5 egg yolks
  • 200 grams all purpose flour
  • 1 tsp baking powder
Filling Ingredients
  • 2 cups peach (or apricot jam)
  • 5 egg whites
  • 140 grams granulated sugar
  • 1 tbsp vanilla sugar
  • 150 grams ground walnuts (or ground hazelnuts)
  • Pinch of salt

Directions

  1. Grease a 9″x13″ baking pan with butter. Preheat oven to 360F.
  2. Beat egg whites with a pinch of salt with an electric mixer until bubbles begin to form. Add the sugars slowly, continue beating until peak forms. Remove from the mixer. 
  3. Add the shredded walnuts and combine together with a wooden spoon. Put aside. 
  4. Combine flour with baking powder in a separate bowl.
  5. Using an electric mixer, combine butter with sugar until smooth and sugar has dissolved. Add in egg yolks and continue mixing until well combined. Slowly add the flour mixture until well combined.
  6. Pour batter into the prepared pan and spread out with a non-stick spoon until the surface is smooth and level. Spread jam over top. Lastly,  pour the walnut mixture over top of the jam and level with a non-stick spoon.
  7. Bake in the oven for 30 minutes at 360F. Check with a toothpick if cooked through.
