Simple Homemade Red Cabbage Coleslaw Recipe (no Mayo)

Coleslaw doesn’t need to be complicated! Today we’re sharing the perfect way to enjoy seasonal red cabbage: a simple fresh red cabbage coleslaw recipe using just 6-ingredients (that you most likely already have at home). This easy red cabbage slaw recipe makes a delicious side dish to your favorite main course meal.

Keeping it Simple with this Red Cabbage Coleslaw Recipe

More often than not, a salad with a simple oil and vinegar dressing compliments the main meal the best. A tangy vinegar-based dressing brings out the fresh flavor or your favorite veggies. Whether it’s fresh greens, cooked beans or cucumbers, adding a classic homemade vingerette dressing is really all that’s needed.

In our house, cabbage (usually green) is a main ingredient that is often used for soups, cabbage rolls, noodle dishes and of course, side salads. We even make our own Sauerkraut to preserve the cabbage for off-season recipes!

Although we’ve used green onion in this batch of purple cabbage coleslaw, we often also make the salad without it. Also, while we love the rich purple hue of the red cabbage, you can easily use green cabbage instead following the same recipe. You can even use this simple recipe with shredded carrots to make carrot slaw. Having versatile recipes is a must!

  • ¼ head of red cabbage, finely shredded
  • ½ cup green onions, chopped
  • 2 tbsp apple cider vinegar (to make your own), red wine vinegar or balsamic vinegar
  • 1 tbsp vegetable oil or light olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to Make Simple Red Cabbage Coleslaw

Shred the cabbage into thin strips carefully by hand with a sharp knife or using a mandolin.

Place the shredded red cabbage in large bowl and add salt. Mix together and leave it to sit for 10 minutes.

Add vinegar, then pepper and the rest of the ingredients (oil and green onions) and mix together.

How to Store this healthy red cabbage slaw?

This vinegar-based slaw will keep well in the refrigerator in an airtight container for 3-5 days.
