Sour Cherry Cake Recipe
I only recently started to appreciate the versatility of sour cherries while I started noticing all the many delicious recipes our mom was preparing with her freshly picked sour cherries off her backyard tree. The cake batter is made simply from scratch using plain or vanilla yogurt, which prepared on it’s own without the sour cherries is also a wonderful dessert option. Just sprinkle the top with icing sugar and you’re good to go!
Otherwise to include the sour cherries, it’s best to add them to the poured batter just before placing the pan in to the oven. To keep the cherries from sinking to the very bottom of the pan, first coat them lightly with blended oats.


Sour Cherry Cake Recipe
Equipment
- 9×13 size pan
Ingredients
- 5 eggs
- 1.5 cups sugar
- 1 tsp vanilla sugar
- ¾ cup plain yogurt or vanilla
- ½ cup vegetable oil
- 2 cups flour
- 1 tbsp baking powder
- 1.5 cup sour cherries halves and pitted
- ⅓ cup blended oats for coating the cherries
- pinch of salt
Instructions
- In a separate bowl, combine baking powder with flour.
- Combine sour cherries with blended oats. This will help prevent the cherries from sinking to the bottom as it bakes. Keep aside.
- Beat eggs with sugar, vanilla sugar and a pinch of salt.
- Blend well for 3-4 minutes on medium speed.
- Add yogurt slowly and continue mixing.
- Add oil slowly and continue mixing.
- After about 10 minutes in total, add the dry ingredients. Slowly sift in the dry ingredients with the liquid ingredients and mix with a wooden spoon. Blend well.
- Add half of the cherries into the bowl and fold in 2-3 times.
- Pour batter into a greased pan.
- By hand, place the remaining cherries on top. The cherries will be absorbed into the batter as it rises and bakes.
- Bake 370F for 30-35 minutes. Check with a toothpick, if it comes out clean, then ready.
