Get the delicious flavours of an apple pie in a flaky pastry without all the effort with this homemade apple pita pie recipe.

We’ll let you in on a little secret. One of the things that we really love about our new venture into blogging is that it’s finally making us get down many of our mom’s amazing recipes (don’t tell her about our ulterior motive). We’ve already captured her delicious egg salad recipe and yummy zucchini cake recipe.
It’s not that she won’t share them with us; she’s just so much faster at baking and cooking than us, that it’s easier for her to do it (this is what we tell ourselves at least). But more so, she doesn’t actually work from a recipe! She’s one of those people that can just put the ingredients together, and voila! a delicious cake appears.
Mom’s Apple Pita Recipe
Mom’s apple pita was a staple for us growing up and she now makes it regularly for our kids who just love it. It’s a great snack for them at school and freezes really well. It also looks very fancy and complicated which will impress everyone if you bring it to a party.

Apple Pita Ingredients
- 6-8 large tart apples, peeled and shredded or chopped really finely
- 2 tbsp sugar
- 1 tsp cinnamon
- 2 tbsp crushed cookies (whatever you have on hand)
- 2.5 cups flour
- 1 tsp baking powder
- 1 tbsp vanilla sugar
- 1.5 cups butter cut into small cubes
- 1-2 tbsps water

How to Make Mom’s Apple Pita (Pie)
Place the shredded apples, sugar and cinnamon in a large saucepan. (Note that if your apples are very tart you may want to add a bit more sugar.) Saute on medium heat for 10-15 minutes until softened. Set aside.

When cooled and before spreading on the dough (see below) stir in the crushed cookies. They will help absorb some of the moisture from the apples.

In the meantime, combine flour, baking powder and vanilla sugar in a large mixing bowl. On low speed, beat in the butter.

Avoid handling the dough too much as you want it to remain cold. If dough is too stiff, add 1-2 tbsp water to help it stick together.

Divide the dough into two gently formed logs, cover in plastic wrap and cool in fridge for 30 minutes.

Preheat oven to 350F.
Working quickly, roll out log to cover the bottom of your baking pan and place it in the bottom of the pan.

Spread the cooled apple mixture evenly over the dough. Roll out the second log and gently place over the apple mixture.

With a fork, poke some holes to allow steam to escape.

Bake in the center of the preheated oven for 30-40 minutes, until the top starts to turn golden. Once baked, let the pita cool before cutting into it, or it may fall apart. Enjoy!
