Easy Ground Beef and Potato Casserole

When we say easy, we mean easy. Simply fry the ground beef and then layer the ingredients in a baking dish, place in the oven and remove when ready. The minimal prep time make this a great family dinner option through the work week and it even tastes better as a leftover dish the next day!

Although we usually use tomato juice in this hamburger casserole, we’ve also used a can of tomato soup and even a jar of marinara sauce and the results are just as tasty. And if you don’t have a fresh onion, use minced onions instead! So not only is it easy to make, there are plenty of ingredient options to try depending on what you have in your cupboards.
