A delicious and hearty main dish, this ground beef and potato casserole is as simple and easy to make as it gets.

Easy Potato Casserole

When we say easy, we mean easy. Simply fry the ground beef and then layer the ingredients in a baking dish, place in the oven and remove when ready. The minimal prep time make this a great family dinner option through the work week and it even tastes better as a leftover dish the next day!

Although we usually use tomato juice in this casserole, we’ve also used a can of tomato soup and even a jar of marinara sauce and the results are just as tasty. And if you don’t have a fresh onion, use minced onions instead! So not only is it easy to make, there are plenty of ingredient options to try depending on what you have in your cupboards.

Ingredients Needed to Make Potato and Beef Casserole

  • ½ kg ground beef
  • 2 1/4 cups white potatoes, sliced
  • ½ cup chopped onions or 2 tbsp minced onions
  • 1 1/2 cups tomato juice
  • salt and pepper to taste

How to Make Potato and Beef Casserole

Preheat oven to 350F.

Cook ground beef and chopped onions in frying pan for 5-8 minutes or until cooked fully.

Put cooked ground beef and onions into a casserole dish.

Slice potatoes and place over top of the ground beef.

Sliced potatoes put over the cooked ground beef.

Add a dash of salt and pepper over top of the potatoes and then pour the tomato juice over top.

Tomato juice poured over the sliced potatoes.

Bake in oven at 350F for 1 hour or until potatoes are soft and can easily pierce through with a knife.

Serve Alongside these Tasty Side Dishes

Similar to our classic beef goulash, this main dish is hearty and delicious. Just add a side salad such as this iceburg wedge salad, a serving of sweet buttery corn or even this easy Romano bean salad and enjoy!

Ingredients
  

  • ½ kg ground beef

  • Slice potatoes and place over top of the ground beef.
  • Add a dash of salt and pepper.

  • Cover casserole dish with lid.
  • Bake in oven at 350F for 1 hour or until potatoes are soft and can easily pierce through with knife.
