Should I Cook My Rhubarb Before Baking?

Yes, when using rhubarb in baking, it is generally recommended to cook it before adding it to your recipe. Rhubarb can be quite tart and fibrous when raw, so cooking it helps soften it and release its natural juices. This not only enhances the flavor but also prevents the rhubarb from becoming too tough or stringy during the baking process.

There are various methods to cook rhubarb, such as simmering it on the stovetop or roasting it in the oven. Once it’s cooked and softened, you can then incorporate it into your baking recipe, whether it’s a pie, crumble, or cake.

However, this is not always necessary such as with our go-to strawberry rhubarb crisp dessert so be sure to follow the recipe for instructions.

How To Make Delightful Rhubarb Cake

Ingredients

For Dough

  • 1 ¾ cup flour
  • 1 tsp baking powder
  • 3 tbsp soft butter
  • 5 tbsp granulated sugar
  • 1 egg

For Topping

  • 4 eggs, divided (cold eggs)
  • ¾ cup granulated sugar
  • 1 pack of vanilla sugar
  • 300 grams of vanilla yogurt
  • 90 grams of powdered vanilla pudding
  • 3 tbsp flour, all-purpose
  • 1 tsp cinnamon
  • 5 cups chopped rhubarb

Instructions

For Dough

  • Mix all ingredients, except the egg, together until the dough is crumbly.
  • Add egg and continue mixing. Do not over-mix the dough. It just needs to have a consistency of being able to roll out the dough.
  • If the dough appears too dry, add 1 tbsp yogurt or sour cream.
  • If the dough appears too wet, add 1 tbsp flour.
  • Roll the dough out on a flat, floured surface to the size of the pan (approx 9×13 in size). Transfer to the pan.

For Topping

  • Using a clean and dry mixing bowl, add the egg whites and mix on medium speed for 2-3 minutes. Then switch to high speed until egg white peaks form.
  • Transfer egg whites to a separate bowl and put aside for the time being.
  • Add the egg yolks with sugars to the mixing bowl and mix on medium speed for 5 minutes. When creamy in texture, add yogurt and continue mixing.
  • Reduce speed to low, add powdered pudding and flour and cinnamon. Mix just until combined.
  • Using a wooden spoon, add chopped rhubarb and egg whites to the flour mixture and stir in one direction just until all are combined.
  • Preheat the oven to 370F.
  • Pour over top of the dough.
  • Bake for 50 minutes.
  • Remove from the oven and cool.
