Dandelions are often seen as pesky weeds, but in reality, they are packed with vitamins, minerals and antioxidants. In this post, we’ll explore the health benefits of dandelions and share a simple recipe to make a delicious salad using these nutrient-rich greens.

Why Dandelions?

Before we dive into the recipe, let’s talk about why dandelions are worth adding to your diet. These common yellow flowers may be considered a nuisance, but they are actually a nutritional powerhouse. Dandelions are rich in vitamins A, C, and K, as well as minerals like iron and calcium.

They also contain antioxidants that can help reduce inflammation and protect against chronic diseases. Additionally, dandelions have been used in traditional medicine for centuries to treat various ailments such as liver problems and digestive issues.

The Benefits of Eating Wild Plants

Incorporating wild plants into our diet is a great way to add variety and nutrition to our meals. Unlike cultivated vegetables, wild plants are often more resilient and nutrient-dense, as they have to fend for themselves in nature.

Dandelions, in particular, are found almost everywhere and can be easily foraged in the spring and summer months. By including wild plants like dandelions in our diet, we can also reduce our ecological footprint by relying less on monoculture farming.

Tips for Picking Dandelions

  • Youngest greens the better. Pick greens before they flower.
  • Pick from a non fertilized garden or pesticide free lawn.
  • The older the dandelion greens, the more bitter the flavor.

Ingredients

  • 4 cups dandelion greens
  • ½ tsp salt
  • 2 cloves finely chopped garlic
  • ½ cup raisins
  • ¼ pumpkin seeds or almond slivers
  • 1 tbsp oil
  • 2 tbsp apple cider vinegar
