Ingredients
- 1.5 cups finely chopped rhubarb
- ½ cup butter softened
- 1.5 cups brown sugar
- 2 eggs

- 1 tsp baking soda melt in 2 tbsp water
- ½ tsp salt
- 1 cup buttermilk or sour milk alternative 1 cup regular milk with 1 tbsp regular white vinegar
Crumble
- 1 cup chopped walnut or almond slivers
- 1 tbsp cinnamon
Instructions
- Cream butter. Add brown sugar slowly.
- When well incorporated, add egg and vanilla.
- Continue mixing.
- Slowly add sour milk and mix by hand.
- Separately, mix all dry ingredients together.
- Add to wet ingredients.
- Add baking soda.
- If batter appears too runny, add another tbsp of flour.
- Add rhubarb at the end and combine just until incorporated.

Bake
- Bake 365F.
- Cover the pan with tin foil and bake covered for first 10 minutes.
- Covered because walnuts tend to burn.
- Uncover and bake for another 25-35 minutes.
- Insert toothpick to ensure cooked through and remove from oven.
