Sugar Twist Donuts Recipe
Combine yeast, 1 cup warm milk and and 2 tbsp granulated sugar in a cup and put aside for a few minutes.
In the meantime, combine flour, yogurt, egg, salt and vanilla sugar in a mixing bowl. Add an additional 3 tbsp flour and mix.
Add the yeast mixture.
Start mixing with the hook attachment and slowly pour the other cup of warm milk. Continue mixing for 6-7 minutes until well blended. If you find the dough too sticky, add a bit more flour.
Keep in a mixing bowl, sprinkle with flour and cover with a clean dish cloth or paper towel.
Leave for 30-40 minutes. Place the bowl in a large pot or sink half full of warm water.
Remove dough and knead by hand for 2 minutes on a floured surface.
Roll the dough out to ½” thick and cut into rectangular stripes about 2″ wide x 4” long.
Cut a slit up the length of the rectangles with just the top section attached. Twist the dough and put aside while preparing the remaining dough.
Deep Frying the Twist Donuts
Add canola oil to a cooking pot and set the temperature to med-high heat. The pot needs to be filled with enough oil for the donuts to be fully submerged. They will float to the top while cooking.
Test that the oil is ready for frying but drpping a small piece of dough into the hot oil. If it sizzles, it’s ready to cook. Alternatively, if using a thermometer, ensure the heat reaches 170C.
Tip: frying donuts at too low of a temperature will result in a tough crust and greasy, hard doughnut texture so be sure to reach optimal temperature.
Put a few donuts in the pot at one time and cook for 4 minutes until sides turn golden. Flip with fork and cook the other side.
Remove from oil and place on paper towel lined plate. Sprinkle with sugar coating.
