Delightful Rhubarb Dessert Squares Recipe

Ingredients

  • 1.5 cups finely chopped rhubarb
  • ½ cup butter softened
  • 1.5 cups brown sugar
  • 2 eggs
  • 1 pack vanilla sugar or 2 tsp vanilla extract
  • 2 cups all-purpose flour unbleached
  • 1 tsp baking soda melt in 2 tbsp water
  • ½ tsp salt
  • 1 cup buttermilk or sour milk alternative 1 cup regular milk with 1 tbsp regular white vinegar

Crumble

  • 1 cup chopped walnut or almond slivers
  • 1 tbsp cinnamon

Instructions

  • Cream butter. Add brown sugar slowly.
  • When well incorporated, add egg and vanilla.
  • Continue mixing.
  • Slowly add sour milk and mix by hand.
  • Separately, mix all dry ingredients together.
  • Add to wet ingredients.
  • Add baking soda.
  • If batter appears too runny, add another tbsp of flour.
  • Add rhubarb at the end and combine just until incorporated.
  • Spoon into a 9x13 or smaller, lightly greased pan.

For Crumble

  • Mix cinnamon and nuts together.
  • Sprinkle over top of batter before baking.

Bake

  • Bake 365F.
  • Cover the pan with tin foil and bake covered for first 10 minutes.
  • Covered because walnuts tend to burn.
  • Uncover and bake for another 25-35 minutes.
  • Insert toothpick to ensure cooked through and remove from oven.
