Creamy Butternut Squash Soup Recipe
Ingredients
- 6 cups Butternut Squash cubed
- 2 med white potatos
- 2 med onions chopped
- 2 cloves garlic minced
- 1/2 litre water
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Vegeta or Italian seasoning
Instructions
- Carefully cut the squash into pieces with a kitchen cleaver. Scoop out the seeds and peel the skin. Cut remaining into cubes.
- Cook all ingredients together (except for garlic) in a large pot for 30 minutes on med heat with a lid.
- Scoop out the veggies and place in a blender. Save the liquid.
- Blend the veggies into a puree.
- Add back into the pot with liquid.
- Add the minced garlic.
- Stir together and cook for 10 minutes.
- If too thick, you can add another cup of water.
- Garnish with finely chopped parsley. Serve.
