Ingredients

Butternut Squash
cubed

white potatos

chopped

or Italian seasoning
Instructions
Carefully cut the squash into pieces with a kitchen cleaver. Scoop out the seeds and peel the skin. Cut remaining into cubes.
Cook all ingredients together (except for garlic) in a large pot for 30 minutes on med heat with a lid.
Scoop out the veggies and place in a blender. Save the liquid.
Blend the veggies into a puree.
Add back into the pot with liquid.
Add the minced garlic.
Stir together and cook for 10 minutes.
If too thick, you can add another cup of water.
Garnish with finely chopped parsley. Serve.
