Ingredients
  

  • 1 lbs ground beef
  • 1 tsp salt
  • 1 tsp pepper
  • 1 medium onion finely chopped
  • 2 cloves garlic finely chopped
  • 1 celery stick finely chopped
  • 1 red bell pepper finely chopped
  • 1/2 cup cheddar cheese
  • 1/2 cup mozzarella cheese
  • 2 medium spaghetti squash
  • 1 cup tomato juice

Instructions
 

  • Wash squash.
  • Cut in half with a cleaver carefully.
  • Scoop away the seedy center of the squash and brush vegetable oil on the cut sides of the squash. Then sprinkle it with salt.
  • Bake in the oven for 40 to 50 minutes at 350 degrees.
  • Prepare the meat mixture.
  • Saute all vegetables, starting with garlic and onions for about 10 minutes.
  • In a separate pan, cook ground beef with salt and pepper for 15 minutes.
  • Add 1 cup tomato juice to ground beef and incorporate the vegetables. Continue to saute altogether for another 10 minutes.
  • When squash is soft enough (can be pierced with a knife) remove from the oven and fill with meat and vegetable mixture.
  • Sprinkle it with shredded cheese.
  • Bake for another 10 minutes at 350 degrees until the cheese is melted.
  • Remove and serve.
