How to Make Chili with Potatoes
Fry ground beef with chopped onion in a non-stick frying pan. When beef is cooked fully, strain the grease and put aside to discard later.
Cut 4-5 potatoes into 1/2″ to 1″ sized cubes.
Next, cut 1-2 carrots into small pieces and cut 1 stick of celery into small pieces.
Add all cooked ground beef, potatoes, carrots and celery into a crock pot.
Next, add a can of stewed tomatoes into the crock pot along with tomato juice.
Add 2-3 dashes of hot sauce and tabasco sauce. Stir all together and cook on high temperature for 5 hours.
Cook additional time on medium heat or until potatoes are soft.
Add two cans of pork and beans and one can of kidney beans (strained) in to the crock pot. Continue to cook for another 15 minutes.

Tips, Variations & Troubleshooting
Use Different Potatoes
Yukon Gold or red potatoes work beautifully because they hold their shape in the chili. Russet potatoes also work but will soften more and slightly thicken the sauce.
Make It Spicier or Milder
Adjust the heat by adding chili powder, cayenne pepper, or diced jalapeños. If you prefer a milder chili with potatoes, reduce the hot sauce slightly and add a little extra tomato.
Thick or Thin Chili
If your chili becomes too thick, stir in a splash of vegetable broth. If it feels too thin, let it simmer uncovered for 10–15 minutes so the sauce reduces.

Healthy and Satisfying
This chili with potatoes recipe turns a classic comfort dish into something even heartier and more satisfying. The potatoes absorb the rich spices and tomato base, giving every spoonful a warm, comforting flavour that feels perfect for busy weeknights or relaxed weekends.
