Diabetic Banana Cookie Recipe using Stevia Sugar

Ingredients
  

  • 1/2 cup soft butter, unsalted room temperature
  • ½ cup stevia
  • 1 tbsp vanilla sugar
  • pinch of salt
  • 1 egg
  • ½ cup unsweetened apple sauce
  • 2 ripe bananas
  • 2 cups whole wheat flour
  • 3 tbsp all purpose flour
  • 2 tsp baking powder
  • pinch baking soda
  • 2 tsp cinnamon
  • 3 tbsp coconut shredded

Instructions
 

  • Mix softened butter, stevia, vanilla sugar and a pinch of salt all together in a large bowl.
  • When well combined, add one egg and unsweetened apple sauce and mashed bananas.
  • In a separate bowl, mix dry ingredients.
  • Slowly mix dry ingredients into the wet mixture and continue mixing with hook attachment.
  • Lastly add coconut flakes and mix just until combined with a wooden spoon.
  • Using a cookie scoop, scoop a ½ tbsp of dough onto a sheet of parchment paper on a cookie sheet.
  • Bake cookies in an oven for 370F for 16 minutes until golden brown.
  • Cool on a wire rack and store in an airtight container or cookie jar.
