Ingredients
- pork chops boneless
- 2 tbsp salt
- 1 tbsp black pepper
- 1 cup flour
- 1/2 cup cornmeal
- 2 eggs
- 1 tbsp chopped parsley fresh or dried
Instructions
- Mix salt and pepper.
- Rub over top of pork chops.
- Let sit for 30 minutes.
- Mix 1cup flour with 1/2cup cornmeal, pinch of salt and 1 tbsp chopped fresh or dried parsley.
- In a separate bowl, beat 2 eggs with fork.
- Heat oil in frying pan. Just enough to cover thickness of pork chop.
- Heat oil in frying pan on medium heat.
- Dip pork chops into egg mixture then flour mixture.
- When preheated (oil sizzles), continue frying on medium heat. Place pork chop into oil. Cook for 15 minutes one side. Turn over and cook for another 10-12 minutes.
- For thicker pieces, cook another minute or two.
- Remove and place on paper towel lined plate to remove excess oil.
