- pork chops boneless
- 2 tbsp salt
- 1 tbsp black pepper
- 1 cup flour
- 1/2 cup cornmeal
- 2 eggs
- 1 tbsp chopped parsley fresh or dried
Mix salt and pepper.
Rub over top of pork chops.
Let sit for 30 minutes.
Mix 1cup flour with 1/2cup cornmeal, pinch of salt and 1 tbsp chopped fresh or dried parsley.
In a separate bowl, beat 2 eggs with fork.
Heat oil in frying pan. Just enough to cover thickness of pork chop.
Heat oil in frying pan on medium heat.
Dip pork chops into egg mixture then flour mixture.
When preheated (oil sizzles), continue frying on medium heat. Place pork chop into oil. Cook for 15 minutes one side. Turn over and cook for another 10-12 minutes.
For thicker pieces, cook another minute or two.
Remove and place on paper towel lined plate to remove excess oil.
