Savory Zucchini Pancakes Recipe

Delicious, fresh and savory zucchini pancakes are a delight to make as a tasty side dish to any meal when zucchini season is upon us.

Easy to Make Zucchini Pancake Recipe

Crispy on the outside and fried to golden perfection while leaving the inside soft and flavorful, these zucchini pancakes are made simpy with just a few basic ingredients. Have you ever made potato pancakes? If so, the process is very similar: prepare the batter, shred the zucchini and then dip the patties in the batter just before placing them in a hot pan of frying oil to cook.

We usually shred and core the zucchini before shredding, however, this is not always necessary. If the zucchini is more slender and with thinner skin, you can leave the skin on and shred the entire zucchini for making the pancakes.

Serve them hot with a dollop of sour cream and chopped parlsey for color. Enjoy along side a geen leaf salad or seasoned barbeque.

Savory Zucchini Pancakes

Ingredients
  

  • 1.5 cups flour all purpose
  • ½ cup shredded mozzarella cheese
  • 4 eggs
  • Dash of Salt and Pepper
  • 1 tsp Vegeta or other seasoning
  • 1 tbsp chopped parsley
  • 1 cup Oil for frying
  • 2 cups shredded zucchini

Instructions
 

  • Peel and shred zucchini.
  • Add dash of salt to shredded zucchini and mix. Put aside while preparing the remaining ingredients.
  • Mix remaining ingredients together with mixer until well blended.
  • Add oil into frying pan, just enough to cover the bottom of the frying pan. Preheat on med heat.
  • Squeeze salted zucchini to release excess moisture.
  • Add the zucchini to batter and mix with wooden spoon.
  • Prepare zucchini fritters by taking a large spoonful of the mixture. The patties should hold their shape. If batter is too runny, add a bit of flour.
  • Place patties in preheated oil, cook on medium heat. After 5-7 minutes, flip and cook on other side. When each side is golden in color, the zucchini fritters are ready.
  • Transfer to a paper towel lined plate to absorb excess oil. Serve hot.
