This delicious main dish recipe of spaghetti with pan seared zucchini and chicken breast in a buttery smooth gravy comes together in no time at all.
Simple and Tasty Zucchini Chicken Pasta
This time of year we are always looking for delicious ways to cook, bake, grill and eat fresh zucchini. Fortunately for us, the zucchini plants thrive in our parent’s veggie garden so we reap the benefits. From moist zucchini cake with red currants to grilled chicken shish kabobs, we love all things made with zucchini.
This quick chicken and zucchini recipe is perfect for weeknights. Serve with pasta such as spaghetti or rice as an alternative. Pair it with a delicious fresh greens or sliced tomato salad and you’re good to go!
Ingredients:
These proportions serve 4 people.
- 2 pieces large boneless chicken breast – cut each piece into 5 lengthwise pieces
- 3 cups zucchini, cut into 1” cubes
- 2 cups water, divided
- ½ cup butter
- 2 tbsp flour
- salt and pepper
- 1 tsp Vegeta , dried tomato powder, or other Italian seasoning mix
How To Make Chicken Zucchini Pasta
Cut chicken breast into lengthwise pieces, about 4-5 pieces per large sized chicken breast. Add a dash of salt and pepper to the chicken breasts.
In a deep dish non-stick frying pan, melt butter. Add chicken to the pan to brown for 5-6 minutes on each side.
In the meantime, chop zucchini leaving skin on into 1” cubes. Add zucchini to the pan and mix together with the chicken for 3-4 minutes. The chicken and the zucchini will begin to brown from the hot butter.
Add 1 ½ cups of water and vegeta and stir.
Continue cooking over medium heat for 15 minutes, stirring occasionally until the chicken is nice and tender.
In a small cup combine flour with ½ cup of cold water until the mixture is smooth. Pour over chicken and cook for another 2 minutes. The water flour mixture will absorb the brown color from the cooked chicken and zucchini making a more consistent gravy color.
Gravy Tip: If the gravy is too thin, add more flour but add to cold water first to avoid lumpy flour. If the gravy is too thick, add more water and stir.
Cook spaghetti or other pasta noodles in boiling water until tender. Drain pasta and place in a large bowl (or keep in the same pot). Pour the chicken and zucchini mixture over the spaghetti and stir together.
Serve while still hot and enjoy!
