Ingredients
- 2 lb ground beef
- 2 med Onions finely chopped
- 3 cloves Garlic finely chopped
- 2 tbsp mustard
- 2 tbsp ketchup
- 1 tbsp parsley dried
- 1 egg
- 1 cup panko bread crumbs
- 1 tbsp salt
- 1/2 tbsp black pepper
Instructions
- Mix beef with all ingredients using a stand mixer until all combined.
- Form into a loaf shape.
- Transfer to center of a large roasting pan covered with parchment paper.
- Bake at 360F for 30 minutes minutes covered with aluminum foil.
- In a separate bowl, combine cut potato wedges. Coat with 2 tbsp oil and 1/2 tbsp salt.
- Add potatoes to roasting pan around meatloaf.
- Continue baking for another 40 minutes (uncovered) or until potatoes are cooked through.
