One Pot Meatloaf and Roasted Potatoes

A one pot approach to meatloaf and roasted potatoes.

Ingredients

  • 2 lb ground beef
  • 2 med Onions finely chopped
  • 3 cloves Garlic finely chopped
  • 2 tbsp mustard
  • 2 tbsp ketchup
  • 1 tbsp parsley dried
  • 1 egg
  • 1 cup panko bread crumbs
  • 1 tbsp salt
  • 1/2 tbsp black pepper

Instructions

  • Mix beef with all ingredients using a stand mixer until all combined.
  • Form into a loaf shape.
  • Transfer to center of a large roasting pan covered with parchment paper.
  • Bake at 360F for 30 minutes minutes covered with aluminum foil.
  • In a separate bowl, combine cut potato wedges. Coat with 2 tbsp oil and 1/2 tbsp salt.
  • Add potatoes to roasting pan around meatloaf.
  • Continue baking for another 40 minutes (uncovered) or until potatoes are cooked through.
