Wash squash.
Cut in half with a cleaver carefully.
Scoop away the seedy center of the squash and brush vegetable oil on the cut sides of the squash. Then sprinkle it with salt.
Bake in the oven for 40 to 50 minutes at 350 degrees.
Prepare the meat mixture.
Saute all vegetables, starting with garlic and onions for about 10 minutes.
In a separate pan, cook ground beef with salt and pepper for 15 minutes.
Add 1 cup tomato juice to ground beef and incorporate the vegetables. Continue to saute altogether for another 10 minutes.
When squash is soft enough (can be pierced with a knife) remove from the oven and fill with meat and vegetable mixture.
Sprinkle it with shredded cheese.
Bake for another 10 minutes at 350 degrees until the cheese is melted.
Remove and serve.
