Instant Pot Apple Bread Pudding

With juicy apples, plump raisins and a touch of rum, this Instant Pot bread pudding recipe is an easy, rich and delicious way to enjoy leftover bread.

Growing up, leftovers were a staple in our household. Our mom was always finding creative ways to make meals last the week. And with the high cost of groceries, saving bread was no exception. We recently shared our recipe for making homemade bread crumbs using stale bread.

This pudding recipe is another great way to use bread that is no longer fresh and the Instant Pot makes it that much simpler and quicker to prepare. Our easy recipe includes a rum sauce topping. You can consider switching it up with a bit of bourbon or leave it out altogether.

Instant Pot Apple Bread Pudding with Vanilla Rum Sauce

This recipe makes enough to serve 6-8 people.

Ingredients for Apple Bread Pudding

• 7 cups stale cubed bread (any type) – if not stale, lightly toasted
• 3 large eggs
• 2½ cups milk or cream
• 2 cups brown sugar
• 2 tsp maple syrup
• ½ tsp cinnamon
• ½ tsp nutmeg
• 2 medium apples peeled and chopped
• ½ cup raisins

Ingredients for Vanilla Rum Sauce

• 4 oz butter
• ¼ cup brown sugar
• ⅓ cup heavy cream
• 1 tsp rum extract (can substitute with ¼ cup real rum if you like)
• ½ tsp vanilla extract

Instructions for Making Instant Pot Apple Bread Pudding

Whisk together, eggs, milk, brown sugar, maple syrup, cinnamon and nutmeg.

In a separate bowl, combine apples, raisins and bread.

Pour liquid mixture over bread mixture. Allow to sit for a few minutes to absorb, then stir.

Pour mixture into prepared pan, then cover pan with foil, sealing edges.

Add 1½ cups of water to bottom of the Instant Pot. Place pan on trivet and lower into Instant Pot.

Seal Instant Pot and set to manual high pressure for 25 minutes.

After time is up, allow Instant Pot to sit for 10 minutes, then release pressure and remove bread pudding from the Instant Pot. Remove foil and allow to cool.

Loosen around edges with a butter knife, then turn upside down over a serving plate. It should pop right out.

Instructions for Making Vanilla Rum Sauce

Heat all ingredients in a saucepan over medium heat, stirring constantly until mixture thickens slightly. Do not allow to boil.

Remove from heat and allow to cool. Spoon over Bread Pudding.

  • 1/2 cup brown sugar
  • 1/3 cup heavy cream
  • 1 tsp rum extract or substitute with 1/4 cup real rum
  • 1/2 tsp vanilla extract

Apple Bread Pudding

  • In a separate bowl, combine apples, bread and raisins.
  • Combine liquid mixture over bread mixture and allow it to absorb for a few minutes, then stir.
  • Pour mixture into prepared pan, then cover pan with aluminum foil, sealing edges.
  • Add water to bottom of Instant Pot.
  • Place pan on trivet and lower into Instant Pot.
  • Seal Instant Pot and set to manual high pressure for 25 minutes.
  • After time is up, allow Instant Pot to sit for 10 minutes, then release pressure and remove bread pudding from the Instant Pot. Remove foil and allow to cool.
  • Loosen around edges with a butter knife, then turn upside down over a serving plate.

Vanilla Rum Sauce

    Hi, This looks like a great recipe and I am about to try it because I purchased a lot of apples at the grocery store yesterday.
