Should I Peal the Rhubarb?

When it comes to preparing the rhubarb for your baked rhubarb and beef casserole, peeling is not necessary. Rhubarb stalks have a beautifully vibrant hue and a tender texture that cooks down well, without the need for peeling.

Simply ensure that the rhubarb is thoroughly washed and any leaves are removed, as they are not edible. Cutting the stalks into small, bite-sized pieces will help them integrate into the dish.
