Zombie Brains Breakfast “Ice Cream” (a.k.a. Frozen Spinach Smoothie Recipe)

I love smoothies in the morning and this tasty spinach smoothie recipe is an easy way to get in your fiber, minerals and even proteins to keep you going through the day.

However, even though I make my smoothies with delicious kid-friendly fruit such as bananas and strawberries, my kids will not drink them. So, I experimented with making the smoothies into “ice cream”. My kids love Plants vs. Zombies, so the “ice cream”, which is greenish from the spinach and avocado I add in, has become their Zombie Brains Breakfast Ice-Cream. And now they love them!

Sneaking them into desserts is a sure-fire way to get my kiddos to eat their fruits and veggies. While I don’t get to bake as often as I’d like to I love being able to control the amount of sugar that goes into them. A couple of my favourites are our Zucchini cake with berries recipe and our apple pita pie recipe.

Even the littlest one wanted to get in on the action!

*I have only recently learned of all the amazing benefits of chia seeds!  One ounce (approximately 2 tbsps) packs in a whopping 11g of fiber, 4 g of protein, 5g of omega-3 fats all in only 137 calories! I’ve started adding a tbsp of chia seeds to my favorite pancake recipe as well- the kids don’t even notice!
