Strawberry Cake with Crunchy Walnut Topping

Ingredients

  • 1/2 cup butter room temperature
  • 1.5 cups brown sugar packed
  • 2 eggs
  • 1 tbsp vanilla sugar
  • 2 cups flower
  • 1 tsp baking soda with 1tsp powder melted in 1 tbsp warm water
  • Pinch of salt
  • 1 cup buttermilk or regular milk with 1tbsp apple cider or 1/2 tbsp white vinegar
  • 1.5 cups chopped strawberries

Topping

  • 1 cup quick oats
  • 2 tbsp flour
  • 1/4 cup melted butter
  • 2 tbsp brown sugar
  • ¼ cup crushed walnuts

Instructions

  • Cream butter and sugar for about 5 minutes.
  • Then add 1 egg at a time and continue mixing. Add vanilla sugar, salt and powder with soda mixture.
  • Slowly add the flour into mixture.
  • Add strawberries and incorporate with a wooden spoon.
  • If too runny, add another tbsp of flour and mix well.
  • Pour into greased 9x13 pan.
  • Mix topping ingredients and sprinkle over top.
  • Bake on 365F for 25-35 minutes.
  • Check with toothpick if center cooked thru.
  • Sprinkle with powdered sugar when cool.
