Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
Using a medium bowl, whisk the flour, baking soda, cinnamon, ginger, nutmeg and salt.
Using a large bowl, beat the butter, brown sugar and granulated sugar until combined and fluffy.
Beat in the eggs and vanilla until combined.
Gradually beat in the dry ingredients into the wet until combined.
Fold in the old fashioned oats, chopped walnuts and grated carrots.
Use a small cookie scoop, scoop some dough onto the cookie trays about 2 inch apart.
Bake in the oven for 8-10 minutes or until lightly golden brown.
Remove and allow to cool completely.
