Peach and Walnut Dessert Squares Recipe

A bed of golden cake topped with peach jam and crumbly walnuts makes this dessert recipe a winner!

Ingredients

Filling Ingredients

  • 2 cups peach or apricot jam
  • 5 egg whites
  • 140 grams granulated sugar
  • 1 tbsp vanilla sugar
  • 150 grams ground walnuts or ground hazelnuts
  • pinch salt

Instructions

  • Grease a 9"x13" baking pan with butter. Preheat oven to 360℉.
  • Beat egg whites with a pinch of salt with an electric mixer until bubbles begin to form. Add the sugars slowly, continue beating until peak forms. Remove from the mixer.
  • Add the shredded walnuts to the egg mixture and combine together with a wooden spoon. Set aside.
  • Combine flour with baking powder in a separate bowl.
  • Using an electric mixer, combine butter with sugar until smooth and sugar has dissolved. Add in egg yolks and continue mixing until well combined. Slowly add the flour mixture until well combined.
  • Pour batter into the pan and spread with a non-stick spoon until the surface is smooth and level. Spread jam over top. Lastly, pour the walnut mixture over top of the jam and level with a non-stick spoon.
  • Bake in the oven for 30 minutes at 360F. Check to see if it's cooked through by inserting a toothpick to see if it comes out clean.
