Old Fashioned Oatmeal Chocolate Chip Cookie Recipe
Delectable and crunchy, these old fashioned oatmeal chocolate chip cookies with a hint of coconut are a tasty treat.

- 3 cups rolled oats
- 2 cups all purpose flour
- 1.25 cup brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla sugar or extract
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- ½ package of shortening
- ½ cup shredded coconut
- ½ cup chocolate chips semi sweet
- 1 cup raisins optional
- ½ cup chopped walnuts or pecans optional
Combine all dry ingredients in a large mixing bowl.
Cut pieces of shortening and add to the dry ingredients until well combined.
If too dry and crumbly, add 1-4 tbsp for cold water.
Once combined, stir in the shredded coconut and chocolate chips.
Place in fridge for one hour to chill. Dough can also stay in fridge 2-3 weeks.
Make tbsp size balls and place on parchment lined baking sheets, press down gently in the center.
Bake at 360F for 12 minutes.
