Hearty Cabbage and Bean Soup Recipe

- 3 cups of pre-cooked ham cubed
- ½ cabbage head medium sized, chopped in cubes
- 1 can roma beans or red kidney beans
- 2 medium onions chopped
- 4 clove of garlic chopped
- 2 celery sticks chopped
- 2 carrots peeled and chopped
- 3 tbsp tomato paste
- 3 tbsp oil
- 2 liters water
- ½ tbsp salt
- ½ tbsp pepper
In a large pot on top of the stove, add oil with onions and garlic and saute for 2 minutes.
Add in the remaining vegetables with ½ tbsp salt and ½ tbsp pepper and continue to saute for 10 minutes to release flavors.
Add cooked ham to the pot along with the vegetables.
Add 1 litre water into the pot and cook for 30 minutes on low-medium heat, covered.
Add another 1 litre of water with tomato paste. Melt in the tomato paste.
Cook for another 30 minutes until the cabbage is soft.
Drain canned beans (not washed/rinsed) and add to the pot.
Combine 2 tbsp flour in 1 cup cold water in a separate bowl and then add to the pot to thicken the soup.
Cook for another 15 minutes.
