Easy Strawberry Eton Mess Recipe
Strawberry Eton Mess is unfussy, endlessly adaptable, and always hits the spot.

- 3 meringue pecans
- 1 cup strawberries
- 1 cup cream 33%
- 1 1/2 tbsp. powdered sugar
- mint for decoration
Cut off the sepals from the strawberries. Set aside some berries for decoration. Mash half of the strawberries with a potato masher and add 1 tsp. powdered sugar to the mashed strawberries. Stir until the powdered sugar is dissolved.
Dice the remaining strawberries with a sharp knife.
Pour the cream into a bowl, add the powdered sugar and beat with a mixer until soft peaks form. Transfer the cream to a pastry bag fitted with a serrated nozzle.
Break the meringue into medium-sized pieces.
Assemble the dessert. Place some meringue in the bottom of the bowl, followed by the strawberry slices. Pour the strawberry puree over them and cover with a layer of whipped cream. Repeat the layers. Finish the assembly with a layer of cream.
Decorate the dessert with strawberries, meringue crumbs and mint leaves and serve.
