Ingredients

cucumber chopped into cubes
skin on
Small red onion
chopped cubed

tomatoes
chopped

chopped parsley

bell pepper
chopped (in any color)

salt

black pepper

vegetable oil
or canola
3
tbsp
apple cider vinegar
or balsamic vinegar

cans black beans
drained or 1 can black beans and 1 can romano beans
1
can of corn
optional
Instructions
Wash and chop all vegetables.
Combine dressing ingredients and mix together.
Pour over prepared vegetables.
Open cans of black beans (and a can of corn if desired).
Mix all together.
Garnish with parsley.
