Easy Black Bean and Vegetable Salad Recipe

Ingredients

  • 1 cucumber chopped into cubes skin on
  • Small red onion chopped cubed
  • 2 tomatoes chopped
  • 1 tbsp chopped parsley
  • 1 bell pepper chopped (in any color)
  • 1 tbsp salt
  • ½ tsp black pepper
  • 4-5 tbsp vegetable oil or canola
  • 3 tbsp apple cider vinegar or balsamic vinegar
  • 2 cans black beans drained or 1 can black beans and 1 can romano beans
  • 1 can of corn optional

Instructions

  • Wash and chop all vegetables.
  • Combine dressing ingredients and mix together.
  • Pour over prepared vegetables.
  • Open cans of black beans (and a can of corn if desired).
  • Mix all together.
  • Garnish with parsley.
