Refreshing Rice Noodle Salad (Quick & Easy!)

An easy and refreshing rice noodle salad dish that is ready in minutes!

Ingredients

  • 200g rice noodles
  • 1 cup carrots cubed
  • 1 cup cucumbers cubed
  • 1 cup bell peppers red and yellow, cubed
  • 1/2 cup red onion chopped
  • 2 cloves garlic minced
  • Dressing Ingredients
  • 3 tbsp vegetable oil
  • 3 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 black pepper

Instructions

  • Combine all vegetables in a bowl.
  • Combine dressing ingredients and pour over the vegetables to marinate. Put vegetables aside until the noodles are prepared and have cooled completely.
  • Bring water with salt and tbsp vegetable oil to boil in a medium sized pot over the stove.
  • Turn the stove burner off and place rice noodles in the boiling water. Soak noodles in boiling water for 7 to 10 min.
  • Rinse noodles under cold water.
  • Add noodles to mixed vegetables and mix together.
  • Serve.
