Refreshing Rice Noodle Salad (Quick & Easy!)
An easy and refreshing rice noodle salad dish that is ready in minutes!

- 200g rice noodles
- 1 cup carrots cubed
- 1 cup cucumbers cubed
- 1 cup bell peppers red and yellow, cubed
- 1/2 cup red onion chopped
- 2 cloves garlic minced
- Dressing Ingredients
- 3 tbsp vegetable oil
- 3 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/2 black pepper
Combine all vegetables in a bowl.
Combine dressing ingredients and pour over the vegetables to marinate. Put vegetables aside until the noodles are prepared and have cooled completely.
Bring water with salt and tbsp vegetable oil to boil in a medium sized pot over the stove.
Turn the stove burner off and place rice noodles in the boiling water. Soak noodles in boiling water for 7 to 10 min.
Rinse noodles under cold water.
Add noodles to mixed vegetables and mix together.
Serve.
