Monkey Bread Recipe from Scratch (Cinnamon Roll Bites)

Warm, gooey, and impossibly soft—nothing beats homemade monkey bread made entirely from scratch.

  • Bundt cake pan

Ingredients

  • 2 tbsp yeast
  • 1 tbsp sugar
  • 1 cup warm milk
  • 3 cups flour + 2 tbsp flour
  • 1 tsp salt
  • ½ cup butter melted
  • 1 cup brown sugar
  • 1 tbsp cinnamon

Instructions

  • Combine yeast, sugar and warm milk in a small cup and let it sit for 7minutes.
  • Combine flour and 1 tsp salt form dough. Mix together using a dough hook for 7-10 minutes.
  • If dough appears too soft and sticky, add a bit more flour. Needs to be a firmer dough, more like a pizza dough consistency.
  • Cover the bowl with a tea towel and leave it covered for 30 minutes until the dough is double its size.
  • Roll dough out to 1” thick on a floured surface.
  • Cut into 2”x2” squares and then roll squares into small balls.
  • Combine melted butter, 1 cup brown sugar and 1 tbsp together in a small bowl. Dip balls into sugar mixture to coat.
  • Grease bundt cake pan. Place balls into a bundt pan one at a time, layering until all the pieces are in the pan.
  • Bake at 360F for 25 minutes.
  • When just about ready, boil 1 cup water and add 2 tbsp brown sugar.
  • Remove the pan from the oven and pour water / sugar mixture over top.
  • Place back in the oven for another 7-10 minutes.
  • Remove from the oven. Cover with clean cloth for 10 minutes.
  • Turn the pan upside down to remove from the pan.
  • When cool completely, pour the glaze over top (1 cup powdered sugar and 2 tbsp milk).
  • Serve and enjoy.
