Ingredients

  • 4 cups leftover turkey cubed
  • 2 medium onions chopped
  • 1 clove garlic minced
  • 2 tbsp parsley chopped (for garnish)
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp paprika
  • 3 tbsp butter
  • 2 tbsp oil
  • 2 cups all grain long rice
  • 1 tsp Vegeta or your favorite seasoning
  • 3 cups chicken broth or water

Instructions

  • Cut leftover turkey (mix of dark and white meat) into cubes.
  • Saute chopped onions, minced garlic, salt, pepper and paprika in a frying pan with butter and oil to release flavors for about 5 minutes.
  • Add turkey and rice and mix all together.
  • Pour chicken broth (or water) over top of the mixture.
  • Cook covered on low-medium heat for 30 minutes.
  • Check if the rice is soft enough. If not and moisture absorbed, add another ¼ cup of water and continue cooking for 5 minutes.
