Combine water, sugar and yeast in a small bowl or cup. Cover and let sit while preparing the other ingredients.
Combine flour and salt in a large mixing bowl. Add the yeast mixture and combine all together on medium speed (v hook), approx. 7 minutes. The dough needs to be the consistency of a pizza dough. If the dough appears to dry and still, add another ⅓ cup of warm water.
Remove from the mixing bowl and place on a clean, floured surface. Knead with hands for about a minute to form into a bowl. Cover with a paper towel and let sit for 10 minutes.
Roll out the dough and cut into squares or rectangular shapes, approx 3”x5” in size.
Separate the cut pieces away from the surrounding dough allowing space for the dough to rise. Let the cut pieces sit for 10 minutes.
Add vegetable oil to a frying pan, about 2-3 tbsp and preheat. Transfer the pieces to the pan and cook 2-3 minutes each side. When golden and slightly red in color, the flatbread is complete.
Remove from the pan and place on a dish while cooking the other pieces and cover with a paper towel.
