Flavorful Instant Pot Chicken Provencal Recipe

Classic chicken provençal cooked perfectly in an Instant Pot.

Ingredients

  • 5-6 bone in chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon Herbes de Provence
  • 1 teaspoon dried thyme or 3 sprigs of fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper powder
  • 8 garlic cloves
  • 1 large onion cut into large slices
  • 1 cup cherry tomatoes
  • 1 cup green olives
  • 1 cup white wine

Instructions

  • Preheat oven to 400-degree F.
  • Season the chicken thighs with salt and pepper.
  • In a large oven safe skillet heat olive oil, add chicken thighs, cook on medium-low heat untouched for 7-8 minutes, then flip over.
  • Sprinkle Herbes de Provence, Dried Thyme and add sliced onions, garlic, olives and cherry tomatoes. Add wine around chicken.
  • Place the skillet in the oven and braise uncovered for 1 hour.
  • Remove and let it cool.
