Ingredients

  • 3/4 cup barley
  • 1/2 cup red onion chopped
  • 1/2 cup baby carrots diced
  • 1/2 cup bell pepper diced
  • 1/2 cup cucumber chopped
  • 2 Cloves garlic minced
  • Parsley chopped

Dressing Ingredients

  • 3 tbsp vegetable oil
  • 3 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 black pepper

Instructions

  • Cook barley following instructions on packaging.
  • Combine all vegetables in a bowl.
  • Combine dressing ingredients and pour over the vegetables.
  • Add barley to mixed vegetables and mix together.
  • Serve.
