- ¼ cup simple syrup equal parts water and granulated sugar
- 1 cup club soda for a sweeter taste, you can use ginger ale instead
- 1 lime sliced
- Juice from 1 lime
- ¼ cup fresh mint leaves muddled
Prepare the simple syrup by combining equal parts granulated sugar and water in a pot and cookf or 5 minutes until sugar is fully dissolved. Remove from the stove and leave it to cool completely.
Prepare the mint leaves by gently bruising just until it releases its aromatic oils. You don’t want torn bits of mint leaves.
Instead of throwing away the woodier mint stems, you can add them to the sugar and water mixture to make a zero-waste mint simple syrup.
Add the muddled mint leaves, syrup and lime juice into a glass and stir together.
Add the club soda and stir gently.
Lastly, add the ice cubes.
