Equipment

  • rolling pin and cutting board

Ingredients

  • ¼ cup simple syrup equal parts water and granulated sugar
  • 1 cup club soda for a sweeter taste, you can use ginger ale instead
  • 1 lime sliced
  • Juice from 1 lime
  • ¼ cup fresh mint leaves muddled

Instructions

  • Prepare the simple syrup by combining equal parts granulated sugar and water in a pot and cookf or 5 minutes until sugar is fully dissolved. Remove from the stove and leave it to cool completely.
  • Prepare the mint leaves by gently bruising just until it releases its aromatic oils. You don’t want torn bits of mint leaves.
  • Instead of throwing away the woodier mint stems, you can add them to the sugar and water mixture to make a zero-waste mint simple syrup.
  • Add the muddled mint leaves, syrup and lime juice into a glass and stir together.
  • Add the club soda and stir gently.
  • Lastly, add the ice cubes.
