Cook sweet potatoes with skin on in boiling water for 10 minutes. Drain.
When cool enough to touch, peel and cut sweet potatoes into cubes.
Place sweet potatoes in a large mixing bowl.
Add chopped cabbage and radicchio.
Add oil, salt and pepper.
Mix all together by hand.
Transfer to a casserole dish. Cover with lid.
Bake at 360F for 30 minutes.
Mix with a spoon.Sprinkle pomegranate over top.
Continue baking for another 15 minutes.
Remove from oven and serve.
