Savory Zucchini Pancakes
Delicious, fresh and savory zucchini pancakes are a delight to make as a tasty side dish.

- 1.5 cups flour all purpose
- ½ cup shredded mozzarella cheese
- 4 eggs
- Dash of Salt and Pepper
- 1 tsp Vegeta or other seasoning
- 1 tbsp chopped parsley
- 1 cup Oil for frying
- 2 cups shredded zucchini
Peel and shred zucchini.
Add dash of salt to shredded zucchini and mix. Put aside while preparing the remaining ingredients.
Mix remaining ingredients together with mixer until well blended.
Add oil into frying pan, just enough to cover the bottom of the frying pan. Preheat on med heat.
Squeeze salted zucchini to release excess moisture.
Add the zucchini to batter and mix with wooden spoon.
Prepare zucchini fritters by taking a large spoonful of the mixture. The patties should hold their shape. If batter is too runny, add a bit of flour.
Place patties in preheated oil, cook on medium heat. After 5-7 minutes, flip and cook on other side. When each side is golden in color, the zucchini fritters are ready.
Transfer to a paper towel lined plate to absorb excess oil. Serve hot.
