Easy Bacon-Wrapped Scallops Recipe in the Oven

Equipment

  • 1 shallow rimmed baking dish
  • 1 piece of tin foil

Ingredients

  • 6 pieces fresh scallops large sea scallops will give the best results
  • salt and pepper to taste
  • 1 package thin-cut bacon slices 1 slice per scallop
  • 1/4 cup softened garlic butter or regular butter sprinkled with garlic powder
  • 1 tsp softened butter
  • 1 tbsp parsley chopped

Instructions

  • Preheat oven to 360°F.
  • The first step is to prepare a glass baking dish or rimmed sheet pan by brushing with a thin layer of softened butter.
  • Next, pat dry the scallops with a paper towel and then sprinkle them with some salt and pepper.
  • Brush the scallops with softened garlic butter.
  • Wrap each scallop in a slice of bacon. If using smaller scallops, cut the strip of bacon in half before wrapping.
  • Place the scallops in a single layer in the prepared baking sheet and cover with tin foil.
  • Bake covered for 15 minutes on medium heat (360°F) then uncover and continue baking until bacon is cooked fully through (another 20-30 minutes).
  • Sprinkle with parsley and serve.

Notes

If cooking scallops from frozen, it will take longer to cook. Also, DO NOT cover with foil if using frozen scallops as the extra water needs to evaporate off the dish.
If you find the dish too watery after 25 minutes, strain the liquid and continue to bake another 5 minutes until the bacon is crispy.
