Simple Homemade Red Cabbage Coleslaw Recipe (no Mayo)

Ingredients

  • ¼ head red cabbage finely shredded
  • ½ cup green onions chopped
  • 2 tbsp apple cider vinegar or red wine vinegar, balsamic
  • 1 tbsp vegetable oil or light olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Shred the cabbage into thin strips carefully by hand with a sharp knife or using a mandolin.
  • Place the shredded red cabbage in large bowl and add salt. Mix together and leave it to sit for 10 minutes.
  • Add vinegar, then pepper and the rest of the ingredients (oil and green onions) and mix together.
