Cooked Flat Beans Sidedish

Fresh flat beans cooked within a flavourful chopped tomato and mixed vegetable butter sauce.

Ingredients

  • 4 cups flat green beans
  • ¼ cup butter
  • ½ cup chopped onions
  • ¼ cup carrots shredded (optional)
  • 2 cups tomatoes chopped (Roma, Pineapple)
  • ¼ cup bell peppers chopped (red or yellow)
  • 2 cloves garlic chopped
  • Salt and pepper
  • 1 tsp Vegeta or other seasoning mix

Instructions

  • Wash flat green beans and chop the ends off. Discard the ends.
  • Add butter and chopped onions into a large deep dish pan and cook for 2-3 minutes.
  • Add beans, tomatoes, carrots, peppers and garlic. Stir together.
  • Add Vegeta or other seasoning mix and stir.
  • Add a dash of salt and pepper and stir.
  • Cover and continue cooking for 20-30 minutes over low-medium heat until beans are soft but not mushy. Stir occasionally.
