Apple Bread Pudding
- 7 cups stale bread cubes
- 3 eggs
- 2 1/2 cups milk or cream
- 2 cups brown sugar
- 2 tsp maple extract
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 apples peeled and chopped
- 1/2 cup raisins
Vanilla Rum Sauce
- 4 oz butter
- 1/2 cup brown sugar
- 1/3 cup heavy cream
- 1 tsp rum extract or substitute with 1/4 cup real rum
- 1/2 tsp vanilla extract
Apple Bread Pudding
Whisk together, eggs, milk, brown sugar, maple extract, cinnamon and nutmeg.
In a separate bowl, combine apples, bread and raisins.
Combine liquid mixture over bread mixture and allow it to absorb for a few minutes, then stir.
Pour mixture into prepared pan, then cover pan with aluminum foil, sealing edges.
Add water to bottom of Instant Pot.
Place pan on trivet and lower into Instant Pot.
Seal Instant Pot and set to manual high pressure for 25 minutes.
After time is up, allow Instant Pot to sit for 10 minutes, then release pressure and remove bread pudding from the Instant Pot. Remove foil and allow to cool.
Loosen around edges with a butter knife, then turn upside down over a serving plate.
Vanilla Rum Sauce
Heat all ingredients in a saucepan over medium heat, stirring constantly until mixture thickens slightly. Do not allow to boil.
Pour over cooked bread pudding to enjoy.
