  • 4 cups cooked chickpeas
  • ½ cup finely chopped green onions or shallots
  • 1 cup chopped carrots
  • 1 cup diced cucumbers

Vinegarette Dressing

  • ¼ cup apple cider vinegar
  • ½ cup vegetable or canola oil
  • Salt and pepper to taste


  • In a large bowl, combine all of the salad ingredients together.
  • Combine all the dressing ingredients together. Toss with the chickpea salad.
